Super Bowl: Chicken Ring

This Pampered Chef recipe is one of our family favorites and perfect for your Super Bowl party.

2 cups cooked, diced chicken
1 cup steamed broccoli diced small
1 can cream of chicken soup
1 T. parsley
1 cup shredded cheddar cheese
1 small onion
salt and pepper to taste
2 cans cresent rolls

1st 7 ingredients will be mixed together.
Place 1 can of rolls with tips of large end touching to form a circle on pizza pan.  With second can, place rolls end to end in center of pizza pan.  This will allow you to place chicken mix in a circular form then criss cross the small end of cresent rolls to cover the mixture.  Bake at 375 for 20 to 25 min or until the rolls are golden brown.  Enjoy!!

Super Bowl Recipe: Hot Fiesta Dip

I’m so excited to by trying out a new recipe for the Super Bowl especially since it is super simple.  I’m definitely not one to make an elaborate meal… I leave that up to my mom, my mother-in-law and my sister-in-law.  So, I found this recipe when I was searching for the very easy recipe for homemade ice cream that I use with my automatic ice cream maker.  The recipe comes from weight watchers, which is another plus for health-conscious people.  I’m not really health-conscious, but I’m all about an easy recipe.  

10 oz frozen corn kernels
1 ½ cups salsa, fresh & refrigerated
¾ cup reduced fat shredded Mexican style blend cheese
2 Tbsp scallions, chopped

Microwave frozen corn according to package directions; drain.

Combine corn and salsa in a microwave-safe, 9-inch pie plate; cover and microwave on high power until bubbly, about 2 minutes.

Sprinkle cheese over corn mixture; cover and let stand until cheese melts, about 5 minutes.

Sprinkle with scallions and serve. Yields about 1/4 cup per serving

Super Bowl Recipe: Buffalo Chicken Dip

I have a dear friend that makes this dip and it is one of my husbands favorites and a must in our house for the super bowl.


2- 8oz packages of cream cheese
3 Boneless chicken breasts (cooked and shredded)
1 cup "Red Hot" sauce
3 TBSP Butter
1 Jar chunky blue cheese dressing

Spread cream cheese on bottom of a 9x13 baking dish.
Mix the shredded chicken, hot sauce, butter and blue cheese dressing and pour on top of cream cheese.

Bake at 350 for 20 minutes.  Stir once and serve with tortilla chips.
