Super Bowl Recipe: Hot Fiesta Dip

Wednesday, February 02, 2011

I’m so excited to by trying out a new recipe for the Super Bowl especially since it is super simple.  I’m definitely not one to make an elaborate meal… I leave that up to my mom, my mother-in-law and my sister-in-law.  So, I found this recipe when I was searching for the very easy recipe for homemade ice cream that I use with my automatic ice cream maker.  The recipe comes from weight watchers, which is another plus for health-conscious people.  I’m not really health-conscious, but I’m all about an easy recipe.

10 oz frozen corn kernels
1 ½ cups salsa, fresh & refrigerated
¾ cup reduced fat shredded Mexican style blend cheese
2 Tbsp scallions, chopped

Microwave frozen corn according to package directions; drain.

Combine corn and salsa in a microwave-safe, 9-inch pie plate; cover and microwave on high power until bubbly, about 2 minutes.

Sprinkle cheese over corn mixture; cover and let stand until cheese melts, about 5 minutes.

Sprinkle with scallions and serve. Yields about 1/4 cup per serving
Enjoy!

Who Are You Rooting For?

Friday, January 28, 2011

I grew up in a small, rural town in Pennsylvania about 2 hours south of Pittsburgh.  Naturally, I became a Steelers fan, and I use the word “fan” loosely.  I can remember my dad always turning on the game rooting for the Steelers, and I was right there cheering too… although I really had no idea what was going on.
Even though I don’t know much more about the game of football today than I did growing up, I am still proud to say that I’m a Steelers fan.  I’m very excited that they are going to yet another Super Bowl.  So, for all of you Steelers fans out there… “Here we go Steelers, here we go! Pittsburgh’s goin’ to the Super Bowl.”
No matter who you are rooting for, we have a special gift for the football fan in your life.

This Officially Licensed NFL locker room picture allows you to be in the middle of the action by having your name put on a jersey with players from your favorite team (mine being the Steelers). The framed and black matted picture (white text on matte and frame not included) features authentic jerseys and equipment and the official NFL logo of your team. Weather your team wins or loses (or even made it to the Super Bowl) show your support with one of these prints.
